I love Baba Ganoush. Most of the ones you buy or see recipes for have lots of added olive oil. This one is truly heart healthy and contains no oil or processed food.
It's easy to make, and you can double or triple the amount easily.
- 1 tsp smoked paprika
- 1 tsp cumin
- 6 garlic cloves
- 2 eggplant large
- 1 lemon (juiced)
- 1/4 cup tahini
Roast eggplant on grill (or in oven at 400F ) for 60 minutes. They may look deflated after they cool.
In your food processor mince the garlic. You can also chop by hand if you prefer.
Then add the rest of the ingredients and pulse or mix together. You will want some texture of the eggplant left. You can also add some lemon zest if you like.
